Hi Everyone! I hope you've all had a great week. My week has flown by, and I realized I only posted once! So here is a quick post with some of my favorite recipes.
I always double this and you can easily substitute ingredients.
Spinach and Feta Pasta
I double this as well. I'm all about making enough to have leftovers for at least 1 or 2 nights. I use whole wheat pasta, and I've recently learned that buying a block of feta cheese is SO much better than buying crumbled feta. For extra protein I add a can of garbanzo beans.
Beef and Bean Chimichangas
This recipe is easily adaptable. It's great with chicken breast, ground turkey, or it could be made with no meat at all. This week I made it with whole wheat tortillas and didn't have time to bake it, so I just filled the tortillas and topped with a bit of cheese. If you have the time, bake them, because they get crispy and somehow that makes them even better :) I have to thank my friend (and sort of cousin by marriage?) Colleen for this recipe. She made it for us after I had my daughter and it quickly became a family favorite. Thanks, Colleen!
Salmon with Avocado Salsa
This recipe calls for fresh hot peppers, but I always substitute jarred hot cherry peppers which aren't quite as spicy.
