The holidays are here! Already. I can’t believe it. And I still have ALL of my Christmas shopping to do! At least I have ideas for almost everyone’s gifts, and I think I can do it all online – yay!
Of course along with holiday shopping comes holiday parties! Lots of fun with friends and family, and lots of Food. Right? There is so much eating going on All. Month. Long. But what if you could bring a healthy dish to your next gathering that everyone will love? I have the perfect recipe for you: Spinach Avocado Hummus. As long as you’re in the bean-eating club vs the strict paleo non-bean-eating club, this one is for you! And it is packed with nutritious ingredients so you can feel really good about eating it.
Take a look at these avocadoes. Aren’t they gorgeous? I’ve had really bad luck with avocadoes lately and I wasn’t even sure I’d be able to get this recipe to you any time soon. But I had a feeling as I cut into these that they were going to be perfect, and they were!
This is an easy recipe because all you do is throw all the ingredients into the food processor and look at what you get! Then all you need to do is scrape it out, put it into a bowl and serve. You'll love it!
Spinach Avocado Hummus
- 1 can cannellini beans, rinsed and drained
- 1 1/2 large avocados, roughly chopped
- 1 big handful of baby spinach
- 1/4 cup parsley leaves (optional)
- juice of 1 lemon
- 1 clove garlic
- 3/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp olive oil
Add all of the ingredients in the bowl of a food processor. If it's not blending well, add just a little more olive oil or some water to help it blend together. Serve with your favorite chips, crackers, or veggies.
